Hello essential oil lovers! It's been awhile since I've last posted, but this recipe is definitely worth the wait!

Are you as excited about the Young Living Vitality line as I am? Yay! For those of you who aren't familiar, the Vitality line from Young Living is a dietary line labeled specifically for internal use! They all come in 5ml bottles making them reasonable and a convenient to purchase! There are four distinct categories: citrus, herb, spice and supplement! How fun for cooking and ingesting internally!

I absolutely love using Young Living Lime Essential oil in the kitchen! It adds the perfect touch of lime flavor and is so convenient when you don't have a fresh lime available. I'm so hooked on fish tacos right now, and decided instead to make some tostadas since I had some leftover from a post on my other blog, Hot Eats and Cool Reads!


These tostadas are fresh and delicious! The taste of the pineapple with the lime and cilantro is phenomenal and since tilapia is so easy to prepare, this meal can be ready in less than 30 minutes! Perfect for those busy weeknights when you don't want to spend a ton of time in the kitchen. I love simple recipes like these. So many fresh ingredients brought together for an amazing meal!

Tilapia Pineapple Tostadas with Essential Oil Lime Cilantro Slaw

Ingredients (4 tostadas)
  • 1 tablespoon olive oil
  • 2 tilapia fillets seasoned with salt and pepper
  • 1/4 cup pineapple tidbits
  • 4 tostada shells
  • slaw:
  • 1/4 cup chopped cilantro
  • 1 cup tri color coleslaw mix
  • 2 tablespoons red onion, finely diced
  • 1/4 cup sour cream
  • 1 teaspoon vinegar
  • 1 tablespoon milk
  • 1/2 teaspoon sugar
  • 4 drops of Young Living Lime Vitality Essential Oil or juice from 1 lime
Instructions
Combine all slaw ingredients in a bowl. Refrigerate for 1 hour before serving.
In a medium saute pan, heat olive oil over medium high heat. Place seasoned tilapia in saute pan, cook on one side for 3-4 minutes, flip then cook for an additional 2-3 minutes. remove from heat and flake into bite sized pieces.
Place slaw on top of tostada. Top slaw with 1/2 tilapia fillet and pineapple. Serve immediately.
