Southwest Orzo and Veggie Salad with Buttermilk Dressing Recipe

This salad is perfect for a picnic or BBQ! Healthy for you too!
Are you as excited about the Young Living Vitality line as I am? Yay! For those of you who aren't familiar, the Vitality line from Young Living is a dietary line labeled specifically for internal use! Who here is a big fan of pasta salads? I have a fantastic one for you today!
This salad just screams summertime! With the buttermilk dressing, it's alot lower fat than the salads with a mayo based sauce! It's packed with veggies, and the orzo is a perfect choice for pasta salads! I used Young Living Lime Essential Oil since I didn't have any fresh limes on hand. The lime eo adds the perfect lime flavor and is a quick add in!
This salad is also really good leftover, so make a double batch to eat at lunch for the next couple days. Enjoy!
Southwest Orzo and Veggie Salad with Buttermilk Dressing

Ingredients (4 servings)
- 1 cup uncooked orzo
- 1 cup frozen corn, thawed
- 12 cherry or grape tomatoes, halved
- 3 green onions, sliced
- 1- 15 ounce can black beans, rinsed and drained
- dressing:
- 1/4 cup buttermilk
- 2 tablespoons cilantro, chopped
- 4 drops Young Living Lime Vitality Essential Oil
- 2 tablespoons sour cream
- 2 tablespoons mayo
- 1-2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/4 teaspoon cayenne pepper
- salt and pepper, to taste
- fresh parsley and cilantro, chopped for topping
Instructions
Cook orzo according to package directions. Rinse with cold water and drain completely.
Combine orzo, corn, tomatoes, green onions and black beans in a bowl.
In a separate bowl, combine buttermilk, cilantro, Young Living Lime Oil, sour cream, mayo, chili powder, cayenne, garlic, salt and pepper. Pour over orzo and veggie mixture and stir gently to combine. Top with parsley and cilantro. Serve immediately or refrigerate until serving.
